Vitamix Soup: Apple Butternut Squash Soup

1 butternut squash, seeded and peeled
1 1/2 small apples, cored (so that you eliminate the seeds and the arsenic in them)
1 cup coconut milk
1/2 inch piece of cinnamon
1/2 inch piece of fresh ginger
1/2 teaspoonful sea salt
pinch of chipotle chili pepper

Place all ingredients except 1/2 of an apple into Vitamix Blender. Start on variable 1 and turn up to 10 then switch to high. Blend for 8 minutes then turn down to variable 1. Carefully remove the center of the lid. Watch for the steam and don't burn yourself! It will be HOT! Drop the other 1/2 of the apple in there to coarsely chop. Turn off blender. You're soup is done!

Variations: If you don't want it that spicy, don't put the chipotle pepper in! Also if you would prefer a smooth creamy soup, you can put all the apples in at once. The reason for adding the apple at the end is to give it a little bit of texture. (I prefer it smooth myself).

Vitamix Smoothie: Pomegranate, Orange, Raspberry

1/2 pomegranate
1 peeled orange
1/2 cup raspberries
1/2 cup coconut milk

Place all ingredients in blender. Start Vitamix on variable 1 and increase to 10 then flip to high. Blend approximately 30 seconds. At this point, if it's not cold enough, add a couple cubes of ice and blend or serve over ice. You could also use frozen raspberries and not have to add the ice at the end. Enjoy!

Non-paleo adult only alteration: Add about 1/4 cup of light rum, vodka, or tequila before blending.
